Zlatý kanec na celeru
Maso lehce osolíme, opepříme a dáme do pekáče, k němu přidáme na proužky nakrájený větší celer a hrušku, dva hřebíčky, dva bobkové listy, pět jalovců, podlijeme vodou, do které přidáme lžičku oleje a tři lžíce “našeho” kvalitního a neodtučněného mléka. Na závěr této přípravy masíčko posypeme kořením divočina a navrch položíme několik plátků slaniny. Podusíme do měkka, průběžně podléváme pivem (za odměnu popř. i sebe).. Pokud použijete zvěřinu od nás, bude za chvilku hotová, neboť Vám dáváme jen maso z mladého kusu. Když je maso měkké, přendáme ho do pekáčku a v troubě zapečeme dozlatova. Výpek poté zahustíme pouze vyvařením přebytečné vody, nikoliv moukou !!! V mezičase si připravíme zeleninovou přílohu: cibuli, dvě cukety, papriku (čirvenou i žlutou - pro barvu), mrkev, červenou řepu - vše nakrájíme na plátky, dáme do pekáčku, pokapeme lžičkou oleje, přdáme rozmarýn, provensálské koření, mletý pepř, přidáme plátkyčesneku a lehce osolíme - ti z Vás, kteří dostali v bedýnce kelímek s moravským česnekem se solí a použijí ho, už solit nemusí ! Dáme do trouby ogrilovat. Mezi tím na talíře připravíme masíčko s výpekem a k tomu přidáme horkou grilovanou zeleninku. S měkkým a voňavým chlebíčkem (koupil jsem čerstvého bayera) je to neskutečná kombinace. Doplnění 03.04.13 - dostali jsme poukaz do restaurace JEZPIJE (snad je to správně) na Americké v Plzni a tam je také možné koupit výborný chleba !
Lovecké steaky z divočáka
1 - 1,3 kg kýty či hřbetu, sůl, 100 g vyuzené slaniny, 3 - 4 lžíce rumr, žitné, koňaku apod., pepř, jalovcové koření, 2 lžíce mouky, 100 g sádla či oleje, 100 g žampionů, 1 - 2 lžíce petrželky
Maso z kýty či hřbetu nařežeme na steaky, lehce naklepeme (z mladých kusů stačí malíkovou hranou ruky), protáhneme klínky dobře vyuzené slaniny, následně pokropíme rumem, žitnou či koňakem (můžeme při tom zkontrolovat kvalitu použitého alkoholu jemným polknutím), poskládáme do misky na sebe a dáme do chladničky na 3 - 4 hod. odležet. Poté osolíme a opepříme, dáme i jalovcové koření (v případě použití směsi koření “Divočina” opatrně se solí), obalíme v mouce a upečeme doměkka na sádle či oleji. Na závěr dáme do výpeku čerstvé žampiony (plátky nebo malé hlavičky) a upečeme je. Na talíři steaky houbami obložíme a hustě posypeme nasekanou čerstvou petrželkou.
